Pearl Barley Vegan Risotto recipe

Ingredients:

Pearl barley 30 gms
Soya nuggets 30 gm
Ghee (Clarified butter)- 1 tsp
Mixed vegetables finely chopped- 1 cup (carrot, peppers, onion, broccoli and any other seasonal vegetables)
Button Mushroom- 1 cup
tomato- 1/2 cup sliced
Ginger and garlic finely chopped
Salt and pepper
Water-1 cup

Method:

Soak the pearl barley in cold water for 1-2 hours. Sieve the water and keep it to dry for 15-20 minutes
Soak the soya nuggets in lukewarm water for half an hour. Squeeze the water out once it has become soft and chop them in small pieces
In a cooker boil mushroom and tomato in 1 cup of water with salt. Once it is cooled, grind the mixture with water you used to boil.
In a pan add ghee, sauté the finely chopped veggies,ginger, garlic, soya chunks and pearl barley, add a bit of salt and pepper and italian herbs (basil, rosemary, parsley, oregano).
Add the mushroom and tomato broth to the pan and let it cook for 10- 15 minutes till it has become gooey.
Garnish with coriander

Detox is one of the most abused word today. People want to detox with powders, pills and something green to drink, without putting much thought to what detox actually suggest. What is exactly the right way to detox? To understand that we have to understand human body a bit scientifically.

In actual term, detox means cleansing. When one detoxes, they abstain themselves from eating certain food and engage into a systematic method to clean their system.
So drinking a green colour drink in the morning and then eating pizza at night is not detox. Human body is very smart when it come to detox. Our body part, especially liver is working 24/7 to cleanse our blood. The point is how we help our body to be more effective in doing what they do best.

Lets look at body parts, which actually work hard to detox our body.

1. Liver: The liver filter blood coming from the digestive tract, before passing it to the rest of the body. It also plays vital role in metabolism of fat, protein and carbohydrate.

2. Intestine: With secretion of bile toxic substances are transported into the small intestine and continue through the intestinal tract to exit the body in the stool.
Whatever can still be utilized from the alimentation, such as fiber, is broken down with the help of the intestinal micro flora, and is transported to the liver for detoxification.

What are food items that make a detox diet?

Water: Water should be first step towards cleansing your body. Drink 4-5 liters of water, preferably lukewarm. Add lemon, mint, fennel, rose, bishop weeds, fenugreek seeds, raw turmeric, pepper or ginger to improve digestion and metabolism

Fruits: Fruits that are rich on fiber like apple, papaya, pineapple, guava, sugarcane, and Indian gooseberry. Dry fruits like Figs and Munaka (Raisins with seeds) work as natural laxative.

Vegetables: Most Non-starchy seasonal vegetables are helpful as they are light in stomach and are packed with nutrients. Most vegetables are highly recommended in detox diet.

Ingredients

1.40 gm green lentil
2. 1 cheese cube (Vegan can use tofu cheese)
3. chopped veggies
4. Clarified butter, (Ghee) 1 tsp
5. Basil leaves (optional)
6. Black olives (optional)
7. Herbs- Rosemary, basil, oregano and Paprika
8. Salt

Method:

Soak lentil in water for two to three hours. Rinse the lentil and steamed it in pressure cooker just for 10-15 minutes without any water or just two to three tablespoon of water. In a pan add ghee, sautee the veggies, add few basil leaves, herbs and salt. Take the mixture from pan and put it in a flat bowl which can be used in ovens or microwave. Press the mixture well. Add grated cheese and put it in the oven (175 degree for five minutes). Take the bowl out and olives and fresh basil leaves, again bake it for another five minutes.
Cut it with a spatula or pizza cuter into large cubes before serving.

Roast amaranth puff very well. Mix seeds, honey and cocoa powder in yogurt in a small glass. Keep it in fridge to chill overnight
In the morning, on top of the yogurt put amaranth puff layer.
Make another layer of pomegranate, nuts and sprinkle cocoa powder.

  9. Plain yogurt, 50 gm
  10. Olive oil, 1.5 tbsp

Method: 

Pressure cooker the green gram slightly with water.  Take 1/2 tsp olive oil in a pan, once heated sautee sprouted whole green gram with onion, garlic, ginger and salt.  Sautee them very slightly. Once it is cool, add the green gram, yogurt, sesame seeds and 1 tbsp olive oil in grinder and make smooth paste. If necessary, add the remained water from boiling green gram little by little to make the paste smoother. Squeeze the lemon in it and mix well. Put the hummus in a bowl, pour left over olive oil in the center, garnish with chilly powder and coriander. Goes well sauteed veggies, salad or whole wheat pitta bread.

Put butter in a pan, once it is hot add chopped onion and tomatoes. Add salt and turmeric and let it cook, add little water so that it does not become dry.
Break two eggs in the pan, sprinkle salt, pepper and green chilli. Cover it and reduce the flame.let it cook for 5 to 10 minutes. If you feel it is sticking to the pan, sprinkle some water and cover it again. Once it’s cooked remove it gently from below and place it in a plate.
